Apple-Cinnamon Almond Butter Cups

These muffins are packed with fresh apples and almond butter for a healthful start to the day.
Yield: 12 muffins
Ingredients:
½ cup unsweetened applesauce
2 eggs
¼ cup maple syrup
1½ teaspoons vanilla sugar
½ cup almond butter
1 cup milk or almond milk
2 cups oats
1 teaspoon baking powder
2¼ teaspoons cinnamon
¼ teaspoon salt
1 medium apple, peeled and diced
Directions:
Preheat oven to 350°F.
Line a muffin pan with muffin cups.
In a medium-sized bowl, combine applesauce, eggs, maple syrup, vanilla sugar, and almond butter.
Add milk and mix until smooth and combined.
Add oats, baking powder, cinnamon, and salt.
Mix until combined.
Add apple and mix.
Divide batter among muffin cups.
Bake for 25–30 minutes, until golden brown and cooked through.
