Stupendously refreshing, this drink will hit the spot in any setting.
Yield: 8–10 servings
1 cup frozen blueberries, defrosted
5 cups cold water, divided
1 cup sugar
1 cup boiling water
1 cup fresh lemon juice or juice of 2–3 lemons
Place blueberries and ¼ cup water into a blender and blend until smooth. Strain and discard pieces.
Dissolve sugar in boiling water and mix well. Pour into a large pitcher with a sealable lid. Add lemon juice, remaining cold water, blueberry puree, and mint leaves.
Shake well and serve with ice cubes.
