Coffee Panna Cotta

This recipe is easy to make yet can be presented to look like you spent hours in the kitchen putting it together. Get ready for the compliments from your family and guests.
Yield: 9–12 servings
Ingredients:
1¾ teaspoons gelatin
½ cup water
1 cup coconut cream
1 cup whipping cream
1 tablespoon coffee diluted in ½ cup warm water
½ cup brown sugar, packed
1 teaspoon real vanilla extract
¼ teaspoon kosher salt
Whipped cream, chocolate chunks, Oreo crumbs, and pomegranate arils, for garnish
Directions:
Place gelatin in a small bowl.
Pour water onto gelatin.
Allow to bloom for 5 minutes. Set aside.
Whisk coconut cream, whipping cream, diluted coffee, sugar, vanilla, and salt in a medium-size saucepan.
Heat over medium-low heat until sugar is fully dissolved. Do not boil.
Remove from heat.
Add bloomed gelatin and whisk until fully dissolved and incorporated.
Strain mixture through a fine mesh sieve into a heatproof cup or bowl with a spout.
Pour mixture into silicon molds.
Refrigerate to set and cool for a few hours.
When ready to serve, pop out of molds and decorate with whipped cream, chocolate chunks, and/or Oreo crumbs and pomegranate arils.
