Crispy Meat Flautas

The crispy wrap, warm meat, and fresh tomato salsa is like a party of flavors and textures in the mouth.
Yield: 4–6 servings
Ingredients:
Flautas:
1 tablespoon oil
1 small onion, diced
2 cloves garlic, crushed
1 lb. ground beef
Salt to taste
Black pepper to taste
1 jalapeño pepper, seeds and veins removed, finely diced
1 tablespoon tomato paste
1–2 teaspoons sriracha sauce, or to taste
¼ cup fresh cilantro or parsley, stems removed, finely chopped
1 teaspoon freshly squeezed lemon juice
6 white or whole wheat flour wraps
Fresh tomato salsa:
2 medium-size tomatoes on the vine, finely diced
4 shallots, finely diced
2 tablespoons fresh parsley, finely chopped
1 small jalapeño pepper, seeds and veins removed, finely diced
Juice of ½ lemon
1 tablespoon olive oil
Salt and pepper, to taste
Directions:
Prepare tomato salsa by mixing all ingredients in a bowl.
Refrigerate for 30 minutes before serving.
Preheat oven to 425°F.
Heat oil in a medium-size pot over medium-high heat.
Add onion and sauté until golden.
Add garlic and sauté until fragrant.
Add meat, salt, and pepper and cook through.
Use a wooden spoon to break apart larger pieces so that mixture has a crumbly texture.
Add jalapeño pepper, tomato paste, and sriracha and cook until pepper is soft and most moisture has evaporated.
Add cilantro or parsley and lemon juice and mix.
Line and spray a baking sheet.
Remove meat from heat and allow to cool.
Divide meat mixture into six portions.
Place one portion of meat mixture on bottom third of one wrap.
Fold edges over mixture, roll up wrap, and place seam-side down on baking sheet.
Repeat with remaining meat and wraps.
Spray wraps with cooking spray and bake for 12–15 minutes, until crispy and brown.
