Crock-Pot Meat and Zucchini

This supper is so delicious yet easy to throw together. It makes a great comfort meal on a long, cold winter evening.

Yields: 3 servings


1.5 lb. tender chuck stew meat

2 small zucchinis, sliced

1 onion, sliced

1 can tomato sauce

1 teaspoon soy sauce

2 teaspoons salt

3 frozen garlic cubes

1 teaspoon smoked paprika

1½ teaspoons dried parsley flakes


Lay the meat at the bottom of the Crock-Pot. Top with sliced zucchini and onions.

In a bowl, combine tomato sauce, soy sauce, salt, garlic, paprika, and parsley. Pour over meat.

Cook on high for 3 hours and on low for 1 hour.
