Crunchy Kale Chicken Wraps

This is a perfect supper for when you’re trying to keep it at protein and vegetables only.

Yield: 4 servings

 

Ingredients:

1 lb. chicken nuggets

1 tablespoon oil

Salt, pepper, and paprika, to taste

8 large kale leaves

½ cup shredded carrots

½ cup shredded cabbage

1 mango, diced

Dressing of your choice

 

Directions:

Preheat oven to 400°F.

Toss chicken with oil and spices and spread out on a lined baking sheet.

Bake for 15 minutes.

Once cool, slice into strips.

To assemble wraps, fill kale with carrots, cabbage, mango, and chicken.

Drizzle with dressing, roll up, and enjoy!
