Date Caramel Brownies

A healthy, chocolatey treat made with dates, this is a perfect sweet to add to your Tu B’Shevat table.
Yield: 5 servings
Ingredients:
Brownies:
1 cup almond flour
½ cup cocoa powder
½ teaspoon vanilla sugar
⅓ cup maple syrup
⅓ cup almond butter
2 tablespoons milk or unsweetened nondairy milk substitute
Date caramel:
10 Medjool dates, opened and checked
⅓ cup milk or unsweetened nondairy milk substitute
⅓ cup almond butter
2 tablespoons coconut oil
½ teaspoon vanilla sugar
Toppings:
¼ cup slightly crushed salted almonds
¼ cup chocolate chips
Melted chocolate, for drizzling
Directions:
Combine almond flour, cocoa powder, and vanilla sugar in a bowl.
Add maple syrup, almond butter, and milk and mix well until smooth.
Line a baking sheet with parchment paper.
Spread mixture evenly into ¼-inch thickness.
Freeze for 25 minutes.
Meanwhile, in a food processor, blend dates, milk, almond butter, coconut oil, and vanilla sugar until creamy and smooth.
Spread date caramel over frozen brownie.
Top with crushed almonds and chocolate chips.
Drizzle melted chocolate on top.
Freeze for 2–3 hours.
Cut into squares or break into pieces.
Thaw slightly before eating.
