Deep- Dish Broccoli Pizza

The cheesy broccoli filling makes this pizza a complete meal. You can use two 20-oz. frozen pizza doughs as a shortcut.

 

Yield: 6–8 servings

 

Ingredients:

 

Dough:

1 tablespoon dry yeast

2 tablespoons honey

1⅓ cups warm water

4 cups whole wheat flour

2 tablespoons olive oil

1 teaspoon salt

 

Filling:

 

4 packed cups frozen broccoli, defrosted, squeezed dry, and cut in bite-size pieces

1 small onion, finely diced

1½ cups shredded cheese

1 cup ricotta cheese

½ teaspoon kosher salt

 

Topping:

 

2 tablespoons olive oil

2 cubes frozen garlic

¼ teaspoon kosher salt

 

Directions:

 

Place yeast, honey, and water in a mixing bowl and allow to proof for 10 minutes, covered.

Add remaining ingredients and mix until a smooth dough forms; knead well.

Let dough rise for 30 minutes.

Preheat pizza maker; line with parchment paper.

In a bowl, mix filling ingredients.

In a small bowl, mix topping ingredients.

Divide dough in two parts: two-thirds and one-third.

Roll larger piece into a 16” circle.

Spoon filling in an even layer over circle, leaving a 2” rim.

Roll smaller piece of dough into a 12” circle; place over filling. Fold over rim of larger circle to enclose.

Brush with topping.

Carefully invert pizza into pizza maker and bake, covered, for 10 minutes.

Flip and bake for 5–10 more minutes.
