Greek Pesto Linguine

A winning combination of Italian and Greek flavors.
Yield: 3–4 servings
½ lb. linguine
1 red pepper, diced
½ cup feta cheese
2 tablespoons olive oil
4 frozen basil cubes
¼ teaspoon garlic powder
Salt to taste
Pepper to taste
¼ cup sliced black olives (optional)
Cook linguine according to package instructions until al dente.
While the pasta is cooking, place diced peppers on a baking sheet and lightly spray with olive oil. Broil on
high for 12–14 minutes.
Just before serving, combine pasta with the peppers, feta cheese, oil, spices, and olives. Serve at room
