Green Bean Chicken Stir-Fry

A light and quick one-pot dinner. The parboiling method will give your green beans a fabulous crunch and vivid color.
Yield: 4–6 servings
Ingredients:
1 lb. fresh green beans, stem-ends trimmed
2 tablespoons sesame oil
1½–2 lb. chicken breast, cut in nugget-size pieces
4 frozen cubes garlic
1 teaspoon kosher salt
¼ teaspoon black pepper
¾ cup cashews, checked
⅓ cup sesame teriyaki sauce
Directions:
Bring a pot half-filled with water to a rolling boil.
Add green beans.
Cook for 1 minute, until bright green and barely tender.
Immediately drain green beans and rinse with cold water.
Heat sesame oil in a wide pot or skillet.
Add chicken; cook for 10 minutes, stirring often, until cooked through.
Add green beans, garlic, seasonings, cashews, and teriyaki sauce, tossing to combine.
Cook just until hot.
