Healthier Granola

This healthy granola is a family favorite. When made into bars, it makes a great grab-and-go breakfast option or an awesome after-school snack. I hope you enjoy it as much as we do!
Yield: approximately 18 servings
Ingredients:
½ cup plus 1 tablespoon ground flaxseed, divided
3 tablespoons water
2 cups old-fashioned oats
1 cup almond flour
¼ cup avocado oil
¾ cup honey
2 teaspoons vanilla extract
Pinch of salt
¾ teaspoon cinnamon
¾ cup chocolate chips
Directions:
Line a cookie sheet (or a 9”x 13” pan, for bars) with parchment paper.
In a small bowl, combine 1 tablespoon ground flaxseed with water, mix, and let sit. This is your flax egg.
In a bowl, combine remaining ingredients. Add the flax egg.
Press mixture into pan.
Bake at 350°F for 30 minutes.
For granola, break up into small pieces. For bars, let it sit for 5 minutes before slicing.
What are flaxseeds?
Flaxseeds are small oil seeds. They have gained popularity as a health food due to their high content of heart-healthy omega-3 fats, fibers, and other unique plant compounds. Flaxseeds have been linked to many health benefits, including healthy digestion. Ground flaxseed or flaxseed meal can be found locally at most supermarkets, including Gourmet Glatt and Evergreen.
