Smoothie Bowls

Yom Tov season is behind us, and I don’t know about you, but I’m definitely looking to return to a healthy routine. Of course, having a routine makes it so much easier to prepare healthy snacks and meals so we can go back to eating what our body needs. For me, this means lots of fruits and veggies as well as filling meals to keep me going all day.
One thing I really enjoy but rarely used to make at home is a smoothie bowl. Refreshing and filling and topped with delicious crunch, a smoothie bowl is the perfect mini meal or healthy snack for the busy woman (or teenager), but for some reason I always saw it as something to treat myself to when I was in the mood of a splurge. Since I started making these at home, not only can I have them all the time, but I can also customize them to my taste.
Smoothie Bowl
Yield: approximately 1 serving
Ingredients:
1 cup frozen banana or pineapple
1 cup frozen berries or pitaya (dragon fruit)
1/8 avocado (optional)
¼ cup milk or juice
1 tablespoon acai powder (optional)
Toppings: (Choose one, some, or all!)
Almond butter
Fresh sliced fruit
Toasted nuts
Shredded coconut
Granola
Frozen berries
Mini chocolate chips
Fresh figs
Dried dates
Directions:
Place smoothie ingredients in a good, strong blender and blend until smooth. If too thick, add more liquid, 1 tablespoon at a time. Keep blending for 5 minutes, until the mixture is light and smooth.
Top with desired toppings.
