Healthy Protein Pancakes

Kickstart your day with a nutritious and delicious breakfast that’s packed with about 35 grams of protein, plenty omega-3s, and wholesome ingredients! This recipe is a fantastic way to fuel up and feel energized and focused throughout the morning.

Yield: 8–9 small pancakes

 

Ingredients:

1 cup organic old-fashioned oats

½ cup whipped cottage cheese

½ ripe banana

1 egg

1 tablespoon maple syrup

1 tablespoon avocado oil

2–3 teaspoons milk, plus more if needed

1 teaspoon chia seeds

1 teaspoon ground flaxseed

½ teaspoon baking powder

Dash cinnamon

Pinch vanilla extract

Pinch salt

Blueberries for topping (optional)

 

Directions:

In a mixer, blend all ingredients until smooth.

Add more milk if batter is too thick.

Cook pancakes on a non-stick pan or griddle.

Top with fresh blueberries before flipping for an extra burst of flavor and nutrition.
