These honey-garlic salmon bites are flavorful, quick, and the perfect weeknight dinner. The best part? They’re ready in under 20 minutes. With a sweet-savory marinade that caramelizes in the oven, they’re delicious enough for company but simple enough for any night of the week.

You can marinate the salmon ahead of time—either in the morning or for at least 15 minutes. But if you’re short on time, don’t worry. Even a quick soak in the marinade before baking works beautifully.

Yield: 4 servings

Ingredients:

1 lb. salmon, cut into bite-size cubes

¼ cup olive oil

¼ cup honey

¼ cup coconut aminos

2–3 cubes frozen garlic, or 2–3 cloves fresh garlic

Handful chopped parsley

Sprinkle onion powder

Sprinkle black pepper

Directions:

Preheat oven to 380°F.

In a bowl, whisk olive oil, honey, coconut aminos, garlic, parsley, onion powder, and black pepper.

Add salmon cubes and marinate for a few hours, overnight, or just before baking.

Spread salmon evenly on a parchment-lined baking sheet.

Bake for 18–20 minutes, until golden and caramelized.

How to serve:

These salmon bites are super versatile:

Classic bowl: Over rice with a side salad

Noodle option: Tossed with sesame noodles for an easy upgrade

Protein topper: In a grain bowl with roasted veggies + your favorite herb yogurt sauce
