Lotus Cheese Latkas

These sweet, rich latkes are a treat on their own and make a great base for fun toppings.

Yield: 30–36 latkes

 

 

Ingredient

4 eggs

½ cup sugar

1 lb. farmer cheese

1 cup sour cream, divided

1 cup flour

1 teaspoon vanilla extract

Dash salt

1 cup Lotus butter

Oil or cooking spray, for frying

Whipped cream, for topping

Crushed Lotus cookies, for topping

Directions:

Lightly beat eggs and sugar.

Beat in farmer cheese, ½ cup sour cream, flour, vanilla, and salt.

In a separate bowl, stir Lotus butter and remaining ½ cup sour cream.

Swirl Lotus mixture into farmer cheese mixture.

Heat oil or cooking spray in a griddle or frying pan over medium-low heat.

Use a large spoon to scoop batter onto hot oil.

Fry for 2 minutes per side, until golden brown.

Serve latkes at room temperature, topped with whipped cream and crushed Lotus cookies.
