Mini Deli Rolls, 3 Ways

You can never have enough of these! Purim is a constant come-and-go and guests are always looking for a quick bite as they run to their next stop! Feel free to pick the version that speaks to you the most or have some fun and make all three! Make some extras in advance and put them away for Shabbos so you’ll have one less thing to prepare on this short Friday.
Yield: 36 mini deli rolls
Ingredients:
Classic with a Twist
½ Spanish onion
3 tablespoons oil
½ cup sauerkraut
2 tablespoons mayonnaise
2 tablespoons mustard
2 tablespoons duck sauce, plus more for brushing
1 8-oz. package pastrami
12 mini puff pastry squares
Hot n Spicy Deli Roll
2 tablespoons mayonnaise
1 tablespoon spicy mayo
1 tablespoon honey
1 teaspoon hot sauce
12 mini puff pastry squares
1 8-oz. package pastrami
2 jalapeño peppers, thinly sliced
Duck sauce, for brushing
Sweet and Fruity Deli Roll
2 tablespoons mayonnaise
1 tablespoon pomegranate syrup
1 tablespoon honey
12 mini puff pastry squares
1 8-oz. package pastrami
1 ripe Bartlett pear, sliced
Duck sauce, for brushing
Directions:
Preheat oven to 375°F.
Line three baking sheets with parchment paper.
To prepare classic deli roll with a twist, sauté onion in oil until translucent.
Add sauerkraut and sauté until softened a bit.
Add mayonnaise, mustard, and duck sauce.
Place half a slice pastrami on flaky dough.
Place a small spoonful of mixture in center and wrap dough around it.
Place seam side down on a lined baking sheet.
Brush with duck sauce and top as desired.
Bake for 25–30 minutes, until golden brown.
To prepare hot n spicy deli roll, mix mayos, honey, and hot sauce in a bowl.
Schmear sauce on puff pastry.
Place half slice pastrami on dough.
Place 3 slices jalapeño down center.
Wrap dough around it and place seam side down on a lined baking sheet.
Brush with duck sauce and top as desired.
Bake for 25–30 minutes, until golden brown.
To prepare sweet and fruity deli roll, mix mayo, pomegranate syrup, and honey in a bowl.
Schmear sauce on puff pastry.
Place half slice pastrami on dough.
Place 1 slice pear down center.
lace seam side down on a lined baking sheet.
Brush with duck sauce and top as desired.
Bake for 25–30 minutes, until golden brown.
