Mocha Cheese Bars

Nothing like those indulgent Shavuos-morning treats (and cheats!).

Yield: 1 9”x13” pan

Ingredients:

Base:

10 tablespoons butter, softened (1 stick plus 2 tablespoons)

2 cups dark brown sugar, packed

2 eggs

2 tablespoons coffee granules, dissolved in 2/3 cup boiling water

3 cups flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

Cheese mixture:

1 8-oz. container cream cheese (not whipped)

1 egg

1/3 cup sugar

Add-ins (optional):

Pillow Kliks

Chopped dairy chocolate—dark and white

Chopped pecans

Dairy chocolate chips

Directions:

Preheat oven to 350°F.

In the bowl of an electric mixer, cream butter and sugar. Add egg and coffee and mix until combined. Add dry ingredients and mix just until incorporated. Spread batter in a 9”x13” pan.

Combine cheese mixture ingredients. Drop spoonfuls of the cheese mixture on top of the batter.

Bake for 20 minutes.

Remove from oven and sprinkle add-ins. You may need to gently press them in.

Return to oven for another 25 minutes or until set. Allow to cool.

Cut into bars.
