Peach, Pomegranate, and Feta Salad

This one is so different and out of this world! The colors, the tastes, the sweet pesto dressing…each component complements the others perfectly.

Yield: 6–8 servings

Ingredients:

Salad:

8 oz. baby romaine lettuce

1 ripe peach, thinly sliced

¼ cup pomegranate seeds

¼ cup crumbled feta

 Dressing:

3 tablespoons olive oil

2 tablespoons brown sugar

2 tablespoons lemon juice

1 tablespoon fresh basil, chopped

1 tablespoon fresh parsley, chopped

 Directions:

Whisk dressing ingredients until smooth.

Place salad ingredients in a bowl and drizzle with dressing.
