Almond Chocolate Biscotti
This is one of the best cookies you’ll ever come across—and not just among Pesach cookies. With almonds as the main ingredient, these almond-studded chocolatey biscotti are nutrient-rich and feel substantial besides being tasty and pretty.
Yield: 30 biscotti
Ingredients:
4 eggs
2 tablespoons oil
1 cup sugar
2½ cups almond flour
⅔ cup cocoa
2 teaspoons baking powder
1½ cups roasted slivered almonds
1 cup mini chocolate chips
Dark chocolate, melted, for drizzling (optional)
Directions:
Preheat oven to 350°F.
Line a baking sheet with parchment paper.
In a bowl, beat eggs, oil, and sugar with a fork.
Add almond flour, cocoa, and baking powder; mix to form a smooth dough.
Stir in slivered almonds and chocolate chips.
Use a spatula to form two 2½-inch logs on prepared baking sheet, leaving space between them to allow for growing.
Bake for 30 minutes.
Allow logs to cool.
Slice into ¾-inch slices.
Bake an additional 5–10 minutes on each side, until dry and crisp.
Drizzle with melted chocolate, if desired.
