Recipe, styling, and photography by Faigy Murray

If there’s a trend that I’m seeing, it’s that a lot of the trending foods are simple, basic things everyone wants. Brownies are a real classic; they’re everywhere, and for good reason. Everyone loves a good brownie. This one is rich and decadent and super easy to make! I warn you: You will want to double this recipe.

Yield: 1 9”x13” pan

Ingredients:

9 oz. chocolate chips, melted

1 cup sugar

¾ cup oil

1 teaspoon vanilla extract

2 teaspoons instant coffee granules

4 eggs

½ cup potato starch

½ cup cocoa powder

¾ teaspoon baking powder

¾ cup chocolate chips

Directions:

Preheat oven to 350ºF.

In a pan or microwave, melt chocolate chips; set aside.

Add everything else to bowl; yes, it’s that easy!

Add melted chocolate and mix well.

Pour into a 9”x13” pan.

Bake for 20 minutes for very fudgy brownies or 25 for drier brownies.

Let cool slightly and cut into squares or just scoop directly out of pan.

For a nice dessert, serve warm topped with vanilla ice cream.
