Pesto Salmon

This sheet pan dinner of salmon and potatoes is healthy, quick, and easy. It’s a must-try for a weeknight dinner.
Yield: 3 servings
INGREDIENTS:
Potatoes
1½ lb. small baby potatoes, cut in half
2 tablespoons olive oil
1 tablespoon pesto
½ teaspoon salt
¼ teaspoon black pepper
Salmon
1 lb. salmon fillet, skin off
3 teaspoons olive oil
1 tablespoon lemon juice
¾ teaspoon salt
½ teaspoon pepper
4 tablespoons pesto
Lemon wedges for serving
DIRECTIONS:
Preheat oven to 400°F. Spray a baking sheet with oil or line with aluminum foil.
Place potatoes on baking sheet. Drizzle with olive oil.
Add pesto, salt, and pepper and mix.
Bake for 20 minutes or until potatoes are mostly cooked through.
Move potatoes to one side of pan and add salmon.
Mix oil and lemon juice in small bowl. Brush mixture over the fish.
Season top and bottom of salmon with salt and pepper and spread a nice layer of pesto on each side.
Bake for 12 minutes.
Set oven to broil and broil for 2–3 minutes.
Serve with lemon wedges.
