Pom-Mango Salad

The colors of this salad provide a gorgeous presentation. Feel free to switch things up with your family’s favorite fruity flavors.
Yield: 5 servings
Ingredients:
Salad:
1 sweet potato, cubed
2 tablespoons oil
1 teaspoon salt
8 oz. iceberg lettuce
½ cup pomegranate arils
1 mango, diced
1 cup thin chow mein noodles
Dressing:
2 tablespoons sugar
1 tablespoon hot water
2 tablespoons oil
½ tablespoon balsamic vinegar
1 teaspoon soy sauce
2 tablespoons water
½ teaspoon salt
Pinch of black pepper
Directions:
Combine sweet potato with oil and salt. Place on a baking sheet and roast at 400°F for 30 minutes.
Place salad ingredients in a large bowl.
Dissolve sugar in hot water. Mix with the rest of the dressing ingredients. Pour over salad.
