Pomegranate Salad

A beautiful, delicious, and refreshing pomegranate salad to serve at your Yom Tov meal

 

Yield: 3–4 servings

 

Ingredients:

Salad:

Arils of 1 large pomegranate

3 small cucumbers, diced

2 small tomatoes, diced

3 tablespoons fresh parsley, chopped

½ yellow pepper, diced

¼ cup dried cranberries

 

Dressing:

2 tablespoons lemon juice

2 tablespoons honey

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons oil

 

Directions:

Place pomegranate, cucumbers, tomatoes, parsley, peppers, and cranberries in a bowl.

To prepare dressing, mix lemon, honey, and spices in a small bowl and whisk until combined.

Add oil and mix well.

Pour dressing over salad and mixed gently until coated.
