Roasted Garlic Smash Burgers

These burgers have few ingredients but are packed with flavor. The trick is in the cooking method. Try them, and you may not go back to regular burgers again.
Yield: 4 servings
Ingredients:
Burgers:
1 lb. ground beef
Salt and pepper, to taste
1 tablespoon oil
8 teaspoons mustard
1 head garlic, roasted (recipe below)
4 burger buns
Lettuce
Pickled onions (recipe below)
Coleslaw, or your favorite condiment
Pickles and tomatoes, or your favorite garnishes
Roasted garlic:
1 head garlic, top cut off
Olive oil for drizzling
Pickled red onions:
2 small red onions, sliced thinly
1 cup white wine vinegar
2 tablespoons sugar
1 tablespoon kosher salt
Directions:
To prepare garlic, preheat oven to 350°F.
Place garlic in a muffin tin.
Drizzle with olive oil and cover tightly with aluminum foil.
Bake for 1 hour.
Once cool, squeeze cloves out of peels and mash to form a spread.
To prepare pickled onions, place onions in a heatproof bowl.
In a small saucepan, boil vinegar, sugar, and salt.
Pour mixture over onions.
Let cool completely, then transfer to an airtight container and refrigerate for 2 hours, up to one month.
To prepare burgers, divide cold meat into 8 balls.
Season with salt and pepper.
Heat oil in a nonstick skillet or grill pan over medium-high heat.
Working in batches, place balls into pan.
Sear for 30 seconds, then place a square of parchment paper on top of ball and smash it down, using back of a metal spatula.
Spread 1 teaspoon mustard and some roasted garlic spread onto uncooked part of each burger.
After 3 minutes, when first side is completely browned, flip burger and sear second side for 3 minutes, until browned.
Layer burgers to create 4 stacks.
Spread desired condiments onto buns.
Fill each bun with lettuce, pickled onions, desired garnishes, and one burger stack.
