Broccoli Crumb Salad

Besides their great taste, cabbage salads are great for their long fridge life. Just make sure to pick out the nuts before storing.

Yield: 3 servings

Ingredients:

Salad:

1 small sweet potato, peeled and cubed

2 tablespoons oil

½ teaspoon salt

½ teaspoon pepper

2 cups purple cabbage

1 cup riced broccoli

¼ cup cashews

¼ cup Craisins

Dressing:

2 tablespoons oil

1 tablespoon brown sugar

1 tablespoon maple syrup

½ teaspoon peanut butter

½ teaspoon balsamic vinegar

Directions:

Preheat oven to 375°F. Line a baking sheet with parchment paper.

In a medium mixing bowl, toss sweet potato with oil and spices. Spread onto baking sheet and bake for 15 minutes. Toss and bake for an additional 5 minutes.

In a small bowl, whisk dressing ingredients together.

Place salad ingredients in a large salad bowl and cover with dressing. Toss and serve.
