Spiced Crispy Nuggets with Mango Dip

Perfectly spiced crunch with a fresh burst of fruity flavor.

Yield: 4 servings



1 lb. chicken breast, cut into nuggets

1 egg

2 cups Rice Krispies, slightly crushed

¼ cup panko crumbs

1 teaspoon paprika

½ teaspoon onion powder

½ teaspoon roasted red pepper flakes

3 tablespoons oil

Dipping sauce:

½ cup cubed mango

1 tablespoon apricot jam

1 tablespoon lemon juice


Preheat oven to 350°F. Line a baking sheet with parchment paper.

In a small bowl, whisk egg.

In a separate bowl, combine dry ingredients.

Coat nuggets in egg, then crumb mixture. Place on baking sheet and drizzle with oil.

Bake for 14 minutes.

Place sauce ingredients in a small bowl and blend with an immersion blender until smooth.

Serve alongside nuggets.
