Summer Shabbos Snacking

Whether you’re at home or in the bungalow colony, when it comes midafternoon on the long Shabbosim, we’re all looking for something to munch on. Here are some ideas that are easy to throw together on Friday and will be enjoyed by kids and adults alike.

Sweet and Spicy Nuts

 

While these were sitting on my counter cooling, I kept going back for more, and I was doing it without guilt since hey, it’s got protein!

 

Yield: 6–8 servings

 

Ingredients:

 

1 cup cashews

1 cup pecans

2 cups almonds

1 teaspoon salt

½ teaspoon pepper

¼ teaspoon cumin

¼ teaspoon cayenne pepper

½ cup sugar

¼ cup water

1 tablespoon oil

 

Directions:

 

Preheat oven to 350°F.

Place nuts and spices into a large bowl.

Toss to coat.

In a small saucepan, heat sugar, water, and oil until boiling. Boil for 1 minute. Then pour over nut mixture and mix until fully coated and sugar mixture is slightly thickened.

Cover a baking sheet with silver foil and spray with cooking spray. Spread nuts onto prepared baking sheet. Nuts should be in a single layer yet still sticking to each other.

Bake for 10 minutes. Remove from the oven and stir for approximately 3–5 minutes, until there is no more liquid. Return to the oven for an additional 6 minutes. Cool completely before serving.
