Teriyaki Turkey Rice Bowls

A healthy ground turkey recipe that your whole family is bound to love. They won’t even notice the vegetables packed inside!
Yield: 4–5 servings
Ingredients:
Teriyaki sauce:
½ cup low-sodium soy sauce
¼ cup water
2 tablespoons rice vinegar
2 tablespoons brown sugar
1½ tablespoons granulated sugar
3 cloves garlic, minced
1 frozen ginger cube
1 tablespoon cornstarch or flour
2 tablespoons water
Turkey:
1½ tablespoons oil
1 onion, diced
4 cloves garlic
1 lb. ground turkey
1 cup frozen riced broccoli
1 carrot, peeled and grated
1 red pepper, diced
4 cups cooked white or brown rice
Garnish (optional):
Sesame seeds
Scallions
Directions:
For the teriyaki sauce: In a small saucepan over medium heat, cook soy sauce, water, rice vinegar, sugars, garlic and ginger until sugars dissolve.
In a cup, mix 2 tablespoons water and the cornstarch or flour until dissolved.
Add cornstarch slurry to the saucepan. Reduce to a simmer and mix until sauce thickens.
Remove from stove and set aside.
For the ground turkey: In a large skillet, heat oil and add onions and garlic. Sauté until soft.
Add ground turkey and sauté until cooked halfway, using a wooden spoon or strong spatula to break up turkey into small pieces.
Add riced broccoli, carrot, and pepper. Continue cooking until turkey is no longer pink.
Pour teriyaki sauce over turkey mixture and simmer for 5–10 minutes.
Spoon rice into a large bowl or several individual bowls. Add ground turkey. Garnish with sesame seeds and scallions if desired.
