Tiny Onion Rosemary Potatoes

Dicing the potatoes instead of chunking them cuts down the prep time and packs in the delicious flavor even more. A win-win.

 

Yield: 2 servings

 

Ingredients:

4 potatoes, peeled and diced

1 onion, minced

2 tablespoons olive oil

2 tablespoons onion soup mix

3 sprigs rosemary, chopped

1 teaspoon salt

Pepper, to taste

 

Directions:

Preheat oven to 400°F.

Toss potatoes with remaining ingredients and spread onto a lined baking sheet.

Bake for 25 minutes, then broil to crisp for 5 minutes.
