Avocado Toast

Sometimes the best recipes are non-recipes. This is one that I’ve been making on repeat. If I want to skip the bread, I have it in a whole wheat wrap or even simply eat it as a nice, big salad. The flavor combination is amazing.
Yield: 2 servings
Ingredients:
1 avocado, diced
10 cherry tomatoes, diced small
⅛ red onion, diced very small
½ cup feta cheese, crumbled
1 Tbsp lime juice (or lemon juice, if not available)
4 slices toasted bread
Micro greens, for garnish.
Directions:
Gently toss all ingredients together.
Place on bread and enjoy!
Alternatively, place on wrap or eat with some tortilla chips.
