Pastrami Pinwheels
The thought of these is absolutely mouthwatering!
Yield: 24 wheels
Ingredients:
2 tablespoons oil
1 Spanish onion, sliced into ¼ rings
16 slices pastrami
4 6-inch square tortilla wraps
Guacamole:
3 large avocados, peeled and chunked
1 tablespoon lemon juice
1 teaspoon salt
½ teaspoon pepper
4 cubes crushed garlic
1 cup cherry tomatoes, diced
Wedge of purple onion, diced
Directions:
In a medium skillet, heat up oil. Lower flame and sauté onions until soft. Raise flame and fry pastrami until beginning to curl, about 3 minutes each side.
Place avocados in a medium mixing bowl and mash coarsely. Mix in lemon juice and spices, then stir in the vegetables.
Assemble: On a flat wrap, spread a layer of guacamole. Top with a layer of pastrami and onions. Roll up tightly and slice into 6 pinwheels. Repeat with remaining wraps.
