Rack Of Spare Ribs

Delicious, easy, and finger-licking good.

Yield: 5 servings


5-bone rack of spare ribs

Kosher salt

Black pepper

Good-quality smoked paprika

1 cup brown sugar


Preheat oven to 350°F.

Sprinkle kosher salt, pepper, and a generous amount of smoked paprika onto ribs.

Pat brown sugar onto ribs.

Lay out 2 sheets of heavy-duty aluminum foil, slightly overlapping. Place ribs on top and close foil on all sides. Repeat 2 more times so ribs are covered in 3 layers of foil.

Place ribs on a baking sheet, meat-side down. Bake for 4 hours.

Open foil slightly and test meat’s doneness with a fork. If it isn’t soft, return to oven for another 30 minutes and repeat.

Remove meat from oven and let rest for 1 hour without opening the foil.

When ready to serve, reheat for 15 minutes. Transfer to a plate and pour any extra sauce on top.
