Sizzling Chicken Salad

Chicken fried in potato starch is surprisingly delicious, even served on its own.
Yield: 6 servings
Ingredients:
Salad:
2 lbs. chicken nuggets
1½ cups potato starch
Salt to taste
Black pepper to taste
2 tablespoons oil plus more for frying
1 sweet potato, diced
8 oz. lettuce
1 wedge purple onion, sliced
½ cup pecans
Dressing:
2 tablespoons mayonnaise
2 tablespoons oil
2 tablespoons sugar
1 tablespoon lemon juice
2 teaspoons onion powder
½ teaspoon salt
¼ teaspoon black pepper
Directions:
In a large skillet, heat oil.
Meanwhile, in a bowl, mix potato starch with salt and pepper.
Coat chicken nuggets in the potato starch mixture. Shake off the excess and fry on both sides until golden.
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Toss sweet potato with 2 tablespoons oil and salt and spread onto baking sheet.
Bake for 20 minutes or until browning.
In a bowl, whisk dressing ingredients together until smooth.
Place lettuce, sweet potato, onion, chicken nuggets, and pecans in a serving dish. Drizzle dressing over salad prior to serving.
