Sweet Cashew Chicken

Stirring cashews into this delicious “stir-fry” adds the perfect crunch to this dish.

Yield: 4 servings


1½ lbs. chicken cutlets

3 peppers (assorted colors)

2 cups snow peas

⅓ cup unsalted cashews

Sesame seeds


2 tablespoons oil

pepper, to taste

10 oz. Honey Garlic Stir-fry & Marinade or:

¼ cup soy sauce

¼ cup water

¼ cup sugar

2 tablespoons honey

2 tablespoons tomato paste

¼ cup vinegar


Preheat oven to 375°F.

Stir sauce ingredients together until smooth.

Arrange the chicken and vegetables on a lined baking sheet and toss with half of the sauce.

Bake for 20 minutes.

Toss the mixture with half of the remaining sauce and broil on high for 5 minutes.

Remove from oven and stir in cashews with the remaining sauce.

Top with sesame seeds and serve.
