Baked Spinach-Mushroom Quesadillas

A crispy and delicious meal that comes together quickly and easily for a hot summer night.
Yield: 4 servings
8 oz. mushrooms, sliced
2 cups shredded mozzarella cheese
3 cups chopped fresh baby spinach or frozen spinach, thawed and squeezed
Preheat oven to 400°F.
Place mushrooms in microwave-safe bowl, cover, and microwave for 2–3 minutes, until soft. Drain.
Brush each tortilla with oil and place on baking tray, oiled side down.
On half of each tortilla layer cheese, spinach, mushrooms, and more cheese.
Fold tortillas over.
Bake tortillas for 6 minutes. Flip over and bake for another 6 minutes or until cheese is melted and tortillas are brown.
