Berry Blend Galette

This stunning and delicious dessert can literally be prepared in minutes with no mixer in sight! It’s my new go-to dessert when I’m having company.

Yield: 6 servings

Ingredients:

Dough:

1 ½ cups flour

1 tablespoon sugar

¼ teaspoon salt

1 stick plus 1 tablespoon margarine, chilled

4 tablespoons water

Berry filling:

2 ½ cups fresh or frozen berries (I used strawberries, blueberries, and cherries)

¼ cup sugar

2 tablespoons cornstarch

1 tablespoon flour (only if using frozen fruit)

½ teaspoon cinnamon

2 tablespoons Tuscannini raspberry or apricot jam, divided

Sugar, for sprinkling

Directions:

In a bowl, mix dough ingredients by hand until a smooth dough forms. Flatten into a disc and refrigerate in a Ziploc bag for 1 hour.

Preheat oven to350°F.

In a bowl, combine filling ingredients.

Once chilled, roll out dough between 2 pieces of parchment paper to form a 12-inch circle.

Smear 1 tablespoon jam in the center of the dough. Place a heaping mound of the filling in the center, leaving a 2-inch border. Fold the dough over the edge of the fruit, pleating as you go around. Brush with remaining jam and sprinkle with some more sugar.

Bake for 30 minutes.

Serve at room temperature.
