Corn Ribs

These corn ribs are the perfect balance of sweet and spicy, and they’re oil free.  Warning: once you start eating them, you just can’t stop.


4 fresh cobs of corn

1 teaspoon salt 

1 teaspoon onion powder 

1 teaspoon garlic powder 

¼–½ teaspoon chili powder 

3 tablespoons maple syrup 


Preheat oven to 375°F. Line a baking sheet with parchment paper.

Using a very sharp, large knife, cut cobs in half lengthwise and then in quarters.*

Place corn ribs on baking sheet.

In a separate bowl, combine the rest of the ingredients.

Coat corn ribs on all sides.

Bake for 35–45 minutes.

*Tip: If you find cutting the entire cob of corn too difficult, you can cut it in half across the width before you start.
