Peanut Butter Cups

When you’re craving something sweet, it’s easy to think that you need to squash that craving because of course, sweets are bad for you. But what if I told you that a little sweetness is actually good for you? Sometimes your blood sugar is low, or you want to end your meal with something sweet. If you use the right quality ingredients, you can have your sweets and not do any damage to your health!

Here’s the perfect recipe for the perfect sweet (with just a hint of saltiness) for when you just want to treat yourself in a healthy way.

Yield: approximately 12 cups

Ingredients:

Chocolate mixture:

8 oz. good-quality dark chocolate (at least 60 percent cacao)

2 tablespoons all-natural peanut butter

Peanut butter filling:

1 cup all-natural peanut butter

1/3 cup pure maple syrup or honey

¼ cup (or a little more if needed) almond flour

Sea salt flakes (optional)

Directions:

For the chocolate mixture, place chocolate and peanut butter in a microwave-safe bowl and melt in the microwave for 1 ½ minutes in 30-second increments, mixing after each 30 seconds.

In a bowl, mix peanut butter filling ingredients by hand until smooth.

To assemble: Line cupcake holders. Place 1–2 teaspoons chocolate mixture in the bottom of each liner. Place 1 tablespoon peanut butter mixture on top of the chocolate and press to flatten if needed. Top with 1–2 more teaspoons chocolate mixture. Sprinkle with sea salt if desired.

Place in the freezer for 30–45 minutes, until solid.

Store in the refrigerator.
